The art of selling fish: Quick stops, fresh catches.

One of the most charming aspects of life here is seeing local fishers selling their freshly caught fish right by the roadside.

In Dili, it's even more convenient as fishers bring their catch right to your car window, allowing you to choose your fish without even stepping out.

When it comes to enjoying the fish, one popular accompaniment is Ai Manas, a spicy chili paste made from red or green chilies, garlic, salt, and sometimes pepper and lemon.

Another traditional treat is Katupa, rice cakes wrapped in palm leaves and cooked in coconut milk.

Enjoy with Ai manas (chili sauce) and katupas (rice cake).
